Recipes for your mini’s

I am all about making life as easy as possible for myself. Having two little babes I need to have lots of quick and easy snacks and meals ready and on hand for my hungry girl (she can eat ). I love being able to hand over snacks without worrying about what’s in it and having things we can whip up without a fuss. That’s not to say we don’t have treats and other snacks from the supermarket in the house but I try keep it to a minimal. I am trying to teach Ari to love food… real food! Just like I do and that certain foods are for sometimes only.

All of these are mama and bub friendly and are made from ingredients that are generally common in the average household.

As you can see below we lovvvvee a muffin haha and why not when they are NOT as these are a healthier alternative . Here are some of our fave recipes that all take minimal preparation and then the oven either does the rest or they are quick and easy to cook .

All the muffin recipes are so easy and are a great bonding activity to do with your little one (prepare for mess) Aria is always so excited to give me a hand and then reap the reward at the end. These days I sometimes have Maya in the carrier too so the whole team is helping out.

These muffins were inspired by the 3/4 of an apple Aria decided she didn’t want to eat yesterday 😂 so quick, easy and DELICIOUS 🙌🏻 toddler approved and goes well with a cups for Mum!

1 1/2 cup oats (blend into flour)

1/3 cup almond meal

3/4 apple (you could put one or half 😂)

1 banana

2 eggs

100ml milk of choice

1/3 cup coconut oil

2 tsp baking powder

1 TBS honey

Blueberries and choc chips as desired … (I am equally generous with both)

Blend all ingredients except the blueberries and choc chips.

Stir through your blueberries and choc chips. Place in greased muffin trays. Sprinkle some oats on top and bake on 180 deg for 20-25 depending on your oven.

This was a recipe that was just whipped up so that’s doesn’t make an even amount of muffins lol 😂 working on it!

TURKEY & VEGGIE BALLS ( I call them chicken nuggets )

500g turkey mince (you can use chicken)

1/2 cup bread crumbs

1 egg

1/4 cup grated Parmesan cheese — tasty cheese is even better 🙌🏻

Salt and pepper

1 teaspoon garlic powder

1TBS wholemeal flour

1/2 carrot grated

1/2 zucchini grated

Literally just mix and roll into balls. Pop in the oven for 20- 25 mins 🙌🏻🙌🏻

Such a great snack to have on hand for mama or your little one. I love these with avocado on top. You can make a double batch and freeze for handy heat and serve snacks too. Can be made in normal muffin size or minis depending on how big tour bubs is.

3 eggs

Dash milk (I use almond)

1/2 grated zucchini

Finely chopped mushrooms

Ham cut into small pieces

Salt and pepper to taste

(You can use any fillings you like or that you know your kids will like 😉)

Top with grated cheese! …

Makes 6

Bake in the oven for 20 on 180deg 💁‍♀️

Feeding your toddler can be hard at the best of times and if they are anything like Aria can be so hit and miss with her dinners 🙄 particularly when veggies are involved.

This however is always a winner. She loves it so always a go to in the rotation of meal prep and quick and easy #winning

1/2 cup cheese

1/2 cup milk

Handful chopped Pumpkin or sweet potato

1/2 head Cauliflower

Steam your veg and blend with milk and cheese. Stir through cooked pasta and salt and pepper if desired. That’s it 🙌🏻

You can add in some sneaky greens too!
